Instructions:

  3. In a bowl, mix quinoa, black beans, corn, cumin, salt, and pepper.
  4. Stuff each pepper with the quinoa mixture.
  5. Place the peppers upright in a baking dish.
  6. Bake for 25-30 minutes until the peppers are tender.

Sweet Potato and Chickpea Curry

Ingredients:

  • 1 large sweet potato, peeled and cubed
  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
