Start your day with bold flavors and satisfying meals that go beyond the usual breakfast fare. A savory breakfast can be just as comforting as a sweet one, offering a delicious balance of protein, healthy fats, and hearty ingredients.

Avocado & Egg Breakfast Wrap

Ingredients:

  • 1 large egg
  • 1 small avocado
  • 1 whole wheat tortilla
  • cheese
  • pepper

Start by mashing the avocado on the tortilla. In a skillet, sprinkle cheese. Place an egg in the middle. Sprinkle pepper on top of the egg.

When cooked, place it on the tortilla.

Wrap it up tightly and enjoy.

Sweet Potato & Black Bean Hash

Ingredients:

  • 1โ€“2 tbsp avocado oil or olive oil
  • ยฝ yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 large sweet potato (about ยฝ lb), diced into 1-inch cubes
  • ยผ cup sun-dried tomatoes, sliced
  • 2 tsp smoked paprika
  • ยฝ tsp thyme
  • ยฝ tsp fennel
  • ยฝ tsp cumin
  • 1 tbsp soy sauce
  • 1 (15 oz) can black beans, rinsed and drained
  • 2 cups kale, chopped
  • 2 tsp maple syrup
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a large skillet. Add onions, bell peppers, and a pinch of salt.
  2. Stir in sweet potatoes and cook for 10โ€“12 minutes, stirring frequently. If still firm, add 1 tbsp water and cook for 4โ€“5 more minutes.
  3. Add garlic and sautรฉ for 1 minute.
  4. Fold in paprika, thyme, fennel, and cumin.
  5. Add tomatoes and soy sauce and cook for 2โ€“3 minutes.
  6. Stir in black beans, maple syrup, and kale. Cook until the kale wilts.
  7. Adjust seasoning to taste.

Cheesy Spinach & Mushroom Omelet

Ingredients:

  • Handful of fresh coriander, chopped
  • Handful of spinach, chopped
  • ยผ cup mushrooms, sliced
  • 3 green onions, chopped
  • 1 green chili, chopped
  • 4 eggs
  • Salt and pepper to taste
  • 1 tbsp oil

Instructions:

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat oil in a pan.
  3. Sautรฉ mushrooms, green onions, and green chili until softened.
  4. Add spinach and cook until wilted.
  5. Pour the whisked eggs into the pan.
  6. Once the edges set, sprinkle fresh coriander on top.
  7. Fold the omelet in half and cook until fully set.
