Busy weeknights often leave little time for cooking, but easy meals can still be delicious. Sheet pan chicken and veggies come together quickly, requiring minimal prep and cleanup.

These dishes not only save time but also allow for endless customization based on whatโ€™s in season or in the fridge.

Chicken, Broccoli & Sweet Potato Sheet Pan Dinner

A cozy one-pan meal with simple ingredients and easy cleanup.

Ingredients:

  • 1 lb chicken breasts or thighs, cubed
  • 2 medium sweet potatoes, diced
  • 3 cups broccoli florets
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ยฝ tsp onion powder
  • Salt and pepper to taste
  • Optional: ยผ cup pecans, ยผ cup dried cranberries

Instructions:

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Toss sweet potatoes with 1 tbsp oil, paprika, salt, and pepper. Roast 15 min.
  3. Toss chicken and broccoli with remaining oil and spices.
  4. Add to pan, roast 20โ€“25 min. Top with optional add-ins.

  • Bell peppers (red, yellow, green), sliced
  • Olive oil
  • Salt and pepper

Instructions:

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. Season the chicken with 1 tablespoon of olive oil, salt, pepper, and garlic powder if using.
  3. Toss the carrot sticks with the remaining tablespoon of olive oil, salt, and pepper.
  4. Arrange the chicken and carrots on a sheet pan in a single layer.
  5. Bake for 25โ€“30 minutes, or until the chicken is cooked through and the carrots are tender.
